Tillapia has taken over the markets cause its cheap,but not really the best quality for consuming on a regular basis!
Salmon,mahi,Snook when i can...I usually use olive oil,lemon lil saltnpepper...broil 7-8-9minutes
soak anything with a "gamey or fishy" taste in salt water prior to cooking it. also with fish, if there's any of the brown slimy stuff on the fillet, its fat. fish fat is like chicken fat. absolutely horrific. cut it off.
with out frying fish in breading (since you mentioned pre contest) i use siracha or however the f you spell it mixed with lemon juice. you can add more lemon if you dont like the heat or less lemon if you like some bite. they also make a chili lime sauce thats pretty delicious. havent had it on fish but i bet its great.
I like using chopped onion and garlic and green onion. Then i put the fish in add some garlic powder, lemon juice and pepper flakes. I also add a very small amount of terriyaki sauce mixed with water to steam them in.
Just was looking over and learned that Swai is a bottom feeder fish, that is why it is so cheap. I also just had this for dinner tonight, excuse me ill brb need to hit the bathroom.
Came back to this thread after a long time. Since then have been really watching the type of meats that I eat and really going for the quality. Eating less but seem to feel much better and actually obtain more results. Salmon is my go to, preferably wild caught if my bank account looks strong .
I always cut my fish into chunks, cook them in oil til they're black as hell and then season the shit out if them with Cajun style spices... Works great for catfish and mahi mahi
