On a low carb diet most food choices get really old. One thing allowed on either diet is a small portion of nuts for a serving of healthy fat, when grocery shopping for more nuts I always see these and just wish I could buy them!
The problem is they are TERRIBLE for you, just look at these ingredients, this much fat with an insulin spike spells disaster on any diet:

SUGAR, HONEY, CORN SYRUP, PEANUT AND/OR COTTONSEED OIL, and FRUCTOSE? No way
So I experimented a bit and came up with my own healthy alternative and I think they taste amazing.
So here is what you do, start off with a bag or can of your favorite raw nuts, Pecans, pistachios, almonds, and walnuts are my favorites, so I used a canister of this:

These contain: PEANUTS, ALMONDS, PISTACHIOS, PECANS, WALNUTS, and HAZELNUTS.
So first set aside a small amount of the regular raw nuts so you can compare (before & after) the taste once you have a finished product.
- Now its time to Pre-heat the oven to 300*
-Mix the whole container/bag in a large bowl. Add the following:
-2 Tspn salt (i use mortons light salt)
-1/4c of Sugar free Maple Syrup (should only contain 9g sugar alcohol)
-6-7 packets of Splenda
-1 Tspn of Cinnamon, nutmeg, allspice spice mixture (AKA apple pie spice)
-1.5 Tspn of Walden Farms Chocolate dip (zero calories, but taste great)
After every thing is mixed well spray a cookie sheet with Olive Oil cooking spray, and spread the nuts evenly as possible across. At this point I will usually take 1 more packet of splenda and sprinkle it evenly across the top.
Bake the nuts @ 300* for about 6-8 minutes. keep a close eye on them, my first few times experimenting with this I burnt two batches in a row, they burn quick! as soon as you see any of the nuts start to darken they are done!
Once they are done use a spatula and empty them into a clean bowl. I will add 1 more packet of splenda and a bit more slat and shake/mix well. Allow the nuts to cool off then place them back into the canister.
Thats it! Now taste a handful of your regular nuts, then grab a handful of these and compare. Same great taste if not better IMO as the honey roasted, but no insulin spike associated with it at all!
